Ingredients
6  pound  chicken, rinsed  
1    Onion, peeled and diced   
1    large celery stalk, diced  
1    Carrot, peeled and diced   
4    red potatoes, quartered  
2    sprigs rosemary  
3    Sprigs fresh thyme  
0    Salt & Pepper  
1  tablespoon  olive oil  

Directions
  1. Preheat oven to 375 degrees.
  2. Add olive oil to the Copper Chef pan and brown chicken on all sides. Remove and set aside.
  3. Add vegetables and potatoes and cook for about 4 minutes.
  4. Place the chicken back in the pan on top of the vegetables.
  5. Place the pan in the oven and cook for 1 ½ - 2 hours.
  6. Serve.
