Heat the Copper Chef Titan Pan or a 9-to-11-inch skillet on high for about 30 seconds to 1 minute. Pour in the olive oil, wait until you see white smoke then add the ground beef. Press the beef into a flat disc and allow to brown, about 2-3 minutes. Add the onions and garlic and cook until the beef is brown. Start to break it up with a wood spoon into small pieces. Stir and fold and continue to brown until the onion is translucent and the beef is browned on the outside but rare in the middle.
Fold in ketchup, brown sugar, Worcestershire, soy, and mustard and cook into the beef for about 2 minutes until mixed well and warmed through. Season with salt and pepper. Taste and adjust if necessary. If you feel the sloppy joes is too thick you can always thin with some chicken stock. Remove from heat and prepare to build the Po Boys.
Pop the buns in a toaster oven for 1-2 minutes. Remove from heat and carefully split the buns. Spread the mayo evenly across all the halves. Divide the sloppy joes evenly between bun bottoms. Top the sloppy joes with cheese and place each sandwich with the tops and enjoy!
