Eric’s Pesto Green Beans

Serves 4

Ingredients

2 Tbsp. pesto

¼ cup red wine vinegar

¾ cup extra virgin olive oil

1 lb. French green beans

1 pinch salt & pepper, to taste

Directions:

  1. Fill the Copper Chef half way with water. Add 1 tbsp. sea salt. Bring to a boil and add green beans. Cook until tender.
  2. In a separate bowl, combine pesto, red wine vinegar, olive oil, salt, and pepper.
  3. Toss green beans with pesto mixture before serving.
