My Favorite One Pot Soup Recipe for Winter: Mexican Pozole

It’s still winter and for many that means comfort food, mac-n-cheese, soups, stews, chili, casseroles, whatever your comfort food is there’s a one pot meal that will fit your appetite, budget or festive occasion!

I don’t know about you, but my least favorite part of cooking or baking is the clean up!  All those utensils I had to use, the pots, pans, bowls, measuring cups, the list goes on and on. What I prefer to do is the one pot meal, everything in one non-stick pot and make my clean up so much easier and faster! 

My kids love to help out in the kitchen, ok maybe not love, but they sure do enjoy the finished product! What is better than teaching your kids how to cook?  Teaching them how to cook with less mess and less cleanup so you have more fun family time! These one pot meals will have you out of the kitchen in a breeze and they taste great too!

What’s for breakfast? Sausage Breakfast Squares are the perfect solution!

I love making Sausage Breakfast Squares as my one pot meal for breakfast because it’s quick and easy to assemble and the left overs can easily be cut into squares for individual size containers for work lunches or breakfast for the week!  Even better, double the recipe and freeze half of it for Saturday morning games when you need a quick breakfast because you have an early start!

Sausage Breakfast Squares Recipe

What ingredients do I need?

  • 6 jumbo or large eggs
  • 1 pound breakfast sausage (for a spicy breakfast use the hot sausage)
  • 3 cups shredded potatoes, drained and pressed (make it easy on yourself and buy the hash browns in the freezer section)
  • ¼ cup of butter melted
  • 16 ounces cheddar cheese, Monterey jack or pepper jack cheese
  • ¼-½ cup of onion depending on your onion tolerance
  • 16-ounce container of small curd cottage cheese

I prefer to use my all-in-one Copper Pot that can be used on my stove top and in my oven, it’s the best way to keep this down to one pot! You can use a 9x13 casserole dish if you need to.

Now what? 

Preheat your oven to 375°. Place your pot on your stovetop burner and turn to medium high heat, cook your breakfast sausage until completely cooked and slightly brown, drain the excess grease from the pot and set the sausage in a separate bowl.

In your now empty pot, add your hash browns or shredded potatoes and butter and mix together. Then firmly press them down into the bottom of the pan covering the entire bottom of the pan. Depending on the size of your pan you may have excess that pushes up on the sides, that is ok.

In a same bowl your sausage is, mix the eggs, half the shredded cheese, onion and cottage cheese together.  Pour this mixture over your hash browns and sprinkle the remaining cheese over the top. 

Bake it for 50-60 minutes.  The cheese on the casserole should be browned and a tooth pick inserted in the center should come out clean when it’s done. Let it cool for about 5 minutes before serving. Cut into squares and serve with fresh fruit if you like!

For a quick and tasty dinner that is perfect for cold nights try this delicious and easy Pozole recipe! Here’s what you’ll need:

Mexican Pozole Recipe

What ingredients do I need?

  • 1 5qt or larger Pot
  • 1 chopped Onion
  • 2 Cloves Garlic thinly sliced
  • 1 tbsp Olive Oil
  • 2-3 Chicken breasts, Boneless Pork Chops
  • 2 cans of chopped green chili
  • 2 cans of Rotel Brand canned tomatoes (mild, medium or hot)
  • 2 cans drained Hominy (either white or yellow) in the bean aisle
  • One 16 oz box Chicken Stock
  • 1 Tablespoon Cumin
  • Chopped Jalapeño’s to taste and add some juice for more spice
  • Tostito Tortilla, flour tortilla or Corn Chips
  • 8 oz Sour Cream
  • 1 Lime cut into wedges
  • Chopped cilantro - optional

Get cooking! 

Take your pot and add the olive oil, brown the chicken or pork pieces.  When your meat is fully cooked add your chopped onion and 2 thinly sliced cloves of garlic.  Heat through until translucent, add the 2 cans of chili and your 2 cans of tomatoes.  Then add 2 cans of drained Hominy.  Stirring everything together. Next add your box of Chicken Stock, stirring to mix everything.  Add your chopped jalapeño’s.  Stir and bring to a boil.  Add Cumin, stir and simmer for about 35 minutes. 

You can serve in bowl with crushed tortilla chips, a tortilla or corn chips with a spoonful of sour cream on top.  Serve each bowl with a lime wedge to squeeze on top.  Enjoy!

Need something a little sweeter for a special occasion, let’s look at dessert options! There are so many wonderful desserts out there that are easy to make and are delicious!  One of my favorite things to make is Bananas Foster!  If you aren’t a banana fan you can substitute apples in this recipe.

Bananas Foster Recipe

Let’s get our ingredients for six servings!

  • 1 stick salted butter
  • 1 cup packed dark brown sugar
  • ½ cup heavy cream
  • 2-3 bananas or apples, pealed
  • ½ to 1 cup chopped walnuts – omit this if you need a nut free version
  • ½ cup dark rum
  • ¼ tsp cinnamon
  • Vanilla Ice Cream for Serving

In a 12-inch frying pan you will melt your butter over medium high heat, add the brown sugar and stir together cooking for a minute or two.  Pour in your heavy cream and combine all the ingredients. Slice your bananas or apples and add them to the pan. Stir in your nuts if you are adding them. Then with care, pour in your rum and stir everything together. Let it begin to bubble, simmer for about 2 minutes and add your cinnamon. Turn off your heat and spoon the mixture over a couple of scoops of vanilla ice cream and serve immediately! 

This is a wonderful dessert for any occasion and is so easy to make in a single pan that that clean up is quick and you can get back to that movie, family game night or whatever your evening holds!

There you have it, three delicious one pot dishes that can be enjoyed with family and friends for any occasion.  I personally love to take the left over breakfast casserole and put it in individual serving sizes for a quick breakfast during the week when we are always in a rush to get to school!
