Ingredients

  • 2 tablespoon olive oil
  • 2 pound chuck roast, cut into ½-in. cubes
  • 2 pound pork shoulder, cut into ½-in. cubes
  • 2 cup chopped yellow onions
  • 1 Yellow pepper, diced
  • 1 Green pepper, diced
  • 4 clove cloves garlic, minced
  • 3 tablespoon Chili powder
  • 1 tablespoon Ground cumin
  • 1 tablespoon dried coriander
  • 1 can 28-oz tomato puree
  • 3 cup beef stock
  • 0.25 cup sugar
  • 1 can 15-oz red kidney beans
  • 1 can 15-oz black beans
  • 1 can 15-oz white kidney beans
  • 3 ounce semisweet chocolate, chopped coarsely

Directions

 
  1. Place the Wonder Cooker’s Roaster Pan on the stove top. Heat the olive oil in the Wonder Cooker over medium-high Heat. Add the chuck roast and pork shoulder and cook until the meat is browned on all sides. Remove and reserve the meat.
  2. Add the onions and peppers to the Roaster Pan and sauté for 5 mins.
  3. Add the garlic, chili powder, cumin, and coriander, sit, and cook for 30 secs.
  4. Add the tomato puree, stock, sugar, and beans, lower the heat, and simmer for 1 ½ hrs.
  5. Stir in the chocolate before serving.
