Italian-Style Pork Osso Buco

  • 0.5 cup flour
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 6 pork osso buco shanks
  • 0.75 cup olive oil, divided
  • 1 large onion, diced
  • 1 cup Chicken broth
  • 1 28-oz can diced tomatoes
  • 4 cup tomato sauce
  • 1 cup red wine
  • 4 clove Garlic
  • 4 stalks celery, diced
  • 1 teaspoon oregano
  • 1 bay leaf
  • 3 Sprigs thyme
  • 2 tablespoon capers


1. Preheat the oven to 375°F/191°C.

2. Combine the flour, salt, and black pepper in a bowl. Dust the pork shanks with the mixture.

3. Place the Wonder Cooker’s Casserole Pan on the stove top. Add ½ cup olive oil to the Casserole Pan and heat the oil.

4. Add the pork shanks to the Casserole Pan and brown the shanks. Remove and reserve the shanks.

5. Add the onion and the rest of the olive oil to the Casserole Pan and sauté for 2 mins.

6. Add the broth, tomatoes, tomato sauce, wine, garlic, celery, oregano, bay leaf, thyme, and pork shanks and bring the mixture to a boil.

7. Cover the Casserole Pan with the glass lid, transfer the Casserole Pan to the oven, and cook at 375°F/191°C until the pork is falling off the bone (2–3 hrs.).

8. Top the osso buco with the capers before serving.
