Ingredients

  • 3 tablespoon olive oil
  • 3 clove Garlic
  • 0.5 cup fennel
  • 1 Onion
  • 10 saffron threads
  • 1 shallot
  • 6 plum tomatoes
  • 0.5 cup White wine
  • 3 cup sprigs fresh tarragon
  • 1 pound Cod
  • 0.75 pound medium to large shrimp
  • 20 mussels
  • 20 clams
  • 4 4-5 oz lobster tails

Directions

1. Preheat the Deep-Dish Diamond Pan on medium heat. Add olive oil. Sauté garlic, fennel, onion, saffron, and shallots for 3–4 minutes or until translucent.

2. Add the chopped plum tomatoes, white wine, fish stock, bay leaf, tarragon, cod, shrimp, mussels, clams, and lobster tails. Cover. Turn the heat up to medium-high.

3. Cook until the shellfish open, about 15 minutes.

4. Serve
